Pre-Infusion: The Physics of Wetting the Puck

What happens in the first seconds of an espresso shot — how a low-pressure wetting phase saturates the coffee bed, tames degassing, and sets up even extraction.

What Pre-Infusion Does

Pre-infusion is a deliberate low-pressure phase at the start of an espresso, before the pump ramps to full working pressure. Typically water enters the puck at 1–4 bar (sometimes just line pressure) for a few seconds, wetting the coffee gently rather than blasting it.

The purpose is physical, not chemical. A dry coffee puck is a loosely packed bed of particles riddled with trapped air and carbon dioxide. If full 9-bar pressure hits it instantly, the bed compacts unevenly and water carves the path of least resistance — the birth of a channel. Pre-infusion buys time for the bed to saturate and settle before the destructive pressure gradient arrives.

The Saturation Front

When water first contacts dry grounds, two forces move it: applied pressure and capillary action. Capillarity draws water into the microscopic pores of each particle regardless of pump pressure, which is why even a gentle wetting phase saturates the puck thoroughly.

As water advances, it creates a saturation front — a boundary between wetted and dry coffee that climbs (in reality, descends) through the bed. Ahead of the front the coffee is dry and permeable; behind it, the swollen, saturated grounds have expanded and closed many of the gaps. A slow front lets the whole cross-section wet at a similar rate, so the bed reaches uniform density before high pressure is applied. A violent front outruns capillarity in some regions and leaves dry pockets that later become channels.

Pressure, Time, and the Bloom

Fresh coffee holds 2–10 mL of CO₂ per gram, and pressure changes how that gas behaves. During pre-infusion the low pressure lets much of the trapped CO₂ escape or dissolve gradually — the puck audibly hisses and swells. This is the espresso analogue of the pour-over bloom.

Getting that gas out early matters because CO₂ is hydrophobic: pockets of it repel water and force it to detour, degrading extraction evenness. Very fresh coffee (rested only a day or two) benefits most from a longer pre-infusion, because it has the most gas to shed. Well-rested coffee needs less. This is why the same machine setting can pull a great shot one week and a gushing, foamy one the next: the variable that changed was degassing state, and pre-infusion is the lever that compensates for it.

Why It Reduces Channeling

Channeling is a runaway feedback loop: a low-resistance region gets more flow, which erodes it further. Pre-infusion attacks the loop before it can start. By saturating and swelling the bed at low pressure, it:

  • equalises permeability across the puck, removing the density differences that seed channels;
  • lets fines settle gently into a stable arrangement rather than being slammed downward;
  • closes side-wall gaps as the coffee expands against the basket;
  • releases CO₂ so gas pockets do not deflect the flow.

Only after the bed is uniformly wetted does full pressure ramp up — now the pressure gradient acts on a homogeneous medium and Darcy’s law delivers water evenly everywhere.

Dialing Pre-Infusion

Pre-infusion is a tool to be tuned, not a fixed ritual. Useful heuristics:

  • Longer for fresh, lighter roasts. More degassing and denser, harder-to-wet particles reward 5–10 seconds of gentle wetting.
  • Shorter for rested or darker roasts. Less gas and more soluble, porous structure need little help; over-long pre-infusion can start extraction prematurely and thin the shot.
  • Watch first drops. On a bottomless portafilter, aim for the first drops to appear only after the bed looks uniformly dark and swollen — not while dry patches remain.
  • Change one thing at a time. Because pre-infusion interacts with grind and dose, adjust it in isolation so you can hear and see its effect.

Done well, pre-infusion is invisible in the cup — it simply makes every other variable behave. Its whole job is to hand full pressure a bed that is already even, so the shot that follows is a fair fight.
