Refractometry and TDS: Measuring Extraction Scientifically

How a refractometer turns a bent beam of light into a coffee-strength number, how TDS and extraction yield are calculated, and where the measurement stops being useful.

From Taste to Numbers

For most of coffee’s history, “strong” and “well-extracted” were purely sensory judgements. Refractometry changed that by giving baristas a repeatable number for how much dissolved coffee a cup contains. It does not replace tasting — it anchors it, letting you connect a flavour you liked to a measurement you can reproduce tomorrow.

Two numbers matter. Total Dissolved Solids (TDS) is the concentration of dissolved coffee in the liquid, expressed as a percentage by mass. Extraction yield (EY) is the fraction of the dry coffee grounds that ended up dissolved in the cup. Strength and yield are different questions: TDS is how strong the drink is, EY is how much of the bean you used.

What a Refractometer Measures

A digital coffee refractometer does not measure coffee directly — it measures how much a beam of light bends when it passes from air into the liquid. Dissolved solids raise the liquid’s refractive index, so the more coffee is dissolved, the more the light bends. The device reads this bend and reports it, usually in °Brix (a sugar-based scale) or already converted to TDS%.

Because refractive index also shifts with temperature, good refractometers are temperature-compensated, and samples should be cooled and filtered before reading — suspended (undissolved) particles and oils scatter light and corrupt the measurement. For espresso, which is loaded with emulsified oils and fines, syringe-filtering the sample is the difference between a trustworthy number and noise.

TDS Versus Extraction Yield

The two numbers are linked by a simple mass balance. Once you know the drink’s TDS and its mass, and the dry dose you started with:

Extraction Yield (%) = (Beverage mass × TDS%) ÷ Dry coffee mass

Worked example: a 36 g espresso reading 9.0% TDS, pulled from an 18 g dose. The dissolved coffee is 36 × 0.09 = 3.24 g. Divided by the 18 g dose, that is an extraction yield of 18%.

This is why you cannot judge extraction from TDS alone. Two shots can both read 9% TDS, but if one used a 20 g dose and the other 18 g, their yields — and their flavour balance — differ. Yield is the variable that tracks sour-versus-bitter; TDS tracks intensity.

The Extraction Control Chart

The Specialty Coffee Association popularised the brewing control chart, a grid with TDS on one axis and extraction yield on the other. A commonly cited target window for filter coffee sits around 18–22% extraction at a strength most drinkers enjoy; espresso often lives higher in strength and across a wider yield band because of pressure and fine grinding.

The chart’s value is diagnostic. Sour and thin? Likely under-extracted — low yield. Harsh and drying? Likely over-extracted — high yield. Strong but balanced, or weak but balanced? That is a strength (brew ratio) issue, not an extraction one. The chart separates these two axes that tasting alone often confuses.

The Limits of the Number

Refractometry measures concentration, not deliciousness — and it has real blind spots. Its most important limitation is that it reports a single average for the whole cup. A shot ruined by channeling can read a textbook 20% yield while tasting broken, because the meter averages the over-extracted channel and the under-extracted remainder into one innocent number.

It also cannot tell you which compounds dissolved — only how much total mass did. Two cups at identical TDS and yield can taste worlds apart depending on roast, water chemistry, and extraction evenness. And filtering, temperature, and calibration errors can each shift a reading by more than the difference you are chasing.

Used wisely, the refractometer is a feedback instrument, not a judge: it turns a vague “that was better” into “that was 20.5% at 1.4% TDS,” so tomorrow you can aim instead of guess. The palate still decides what good means — the number just helps you get back there.
